**Trout Are Very Boney-Please use caution with small children**

You may want to run meat through fingers to insure complete bone removal

 

Fried Trout      If desired trout can be descaled easily with a regular kitchen knife

Dip trout in mixture of one beaten egg plus one tablespoon water; roll in seasoned flour and/or cornmeal; brown fish in hot oil on one side; turn; brown on other side.

Dip trout in beer batter recipe below.

Beat 2 eggs; add black pepper, salt, 1 teaspoon baking powder, ¼ cup sugar, crushed potato chips, 6 crushed crackers, ½ cup buttermilk, ½ can beer, 1 cup flour; mix thoroughly; dip trout; fry in hot oil.

Grilled Trout (Our personal favorite)    Skin will peel off after fish is cooked

Place garlic clove and butter in cavity of trout; wrap loosely in foil so steam can escaped; cook on very hot grill about 3-4         minutes on each side.

This recipe works best with a fish basket.

Place fish on grill (unwrapped) for 5 minutes on each side. While fish cooks prepare a lemon butter sauce by melting butter and adding lemon juice.  After peeling and de-boning cooked fish pour butter sauce over it or use as a dipping sauce.

Broiled Trout  Skin will peel off after fish is cooked

Liberally brush olive oil over fish, inside and out; sprinkle with salt & pepper. In shallow broiler pan place several slices of lemon and lime along with several sprigs of tarragon and parsley. Also stuff trout with lemon and lime slices and tarragon and parsley sprigs. Place trout in broiler pan and place about 4 inches from heat for 4 minutes; carefully turn with spatula; cook 4 more minutes.

Baked Trout    Skin will peel off after fish is cooked

Place split trout in baking dish, dot with butter. In saucepan, blend 1 cup milk and 2 tablespoons flour; cook over medium heat, stirring constantly until sauce thickens; cook and stir 1 minute longer; stir in ½ teaspoon garlic salt, ½ teaspoon salt, 1/8 teaspoon crushed dried thyme, a dash of crushed dried oregano, and ½ chopped green onion. Pour sauce over trout; sprinkle lightly with paprika. Bake uncovered at 350 degrees for 20-25 minutes.
